Sweet Potato Chili!
OH MY GOODNESS! I think this is the best RT4 recipe I’ve ever made. It’s really easy too! It only took me 30 minutes from start to finish to make a huge pot of chili! There’s about 3-4 dinners per recipe if you have this over rice or your favourite grain.
2 medium bell peppers, diced
3 cups of salt free veggie broth (I used Campbell’s New Salt Free Veggie Broth)
1 large sweet potato, peeled and chopped
1 can of lentils, rinsed
1 can of kidney beans, rinsed
6 oz can of tomato paste
1-2 tbsp of chili powder
0.5-1 tbsp of cumin
In a large sauce pan, add in red peppers and steam in a splash of water or broth. Once tender, add in the sweet potato and veggie broth. Once the potato is soft, add in the remaining ingredients.
Use the smaller amounts of spice if you plan on eating a larger portion as a meal in itself. If you want to eat it over rice then I suggest the larger amounts of spice. THIS DISH IS MY FAVOURITE!!! And no salt, no oil, no garlic, no onions!! Fantastic!
